Cooking: Vegetarian Burritos


Hi lovely ladies (and gents)! For this very simply recipe, you will need:


  • 1 pkg of firm tofu, drained 
  • 1/3 cup finely chopped onions 
  • 2 tbls chili powder 
  • 1/4 cup salsa 
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup (1 oz.) cheese
  • 6 fajita-size tortillas (I used whole wheat)

Hmmm... doesn't look much like cottage cheese, does it?

Crumble tofu until it has the consistency of cottage cheese. 


Over medium heat, sauté tofu and onions in a nonstick skillet for about 10 minutes, stirring occasionally. Reduce heat to low; add chili powder and mix until the color is evenly distributed; heat about 3 minutes, stirring occasionally. 


Stir in salsa, cilantro (if you use some), and cheese.

At this point, I just got lazy and put everything in the micro-wave 

Place tortillas on a microwave-safe plate; heat according to package directions. Place 1/3 cup of tofu mixture in the center of each tortilla; fold into burritos.


Tadah! Fast, easy and delicious!

  5. Those look nice! I would like to mention that you may want to check that your cheese is free of enzymes/rennet. Otherwise it may not be vegetarian friendly! :)

  9. Im big on tofu so I will try this.. or maybe even use quorn as a mince subsitute. Love Burritos but cant get them easy in the uk :((

  13. I only recently found out myself! It can be a little difficult to find enzyme/rennet free cheese. They make all sorts of vegan cheese so that could be worth checking out! :) There are some non-vegan brands that will say "rennet free" on the package as well.
