Cooking: Vegetarian Spaghetti With Tofu

I don't think a single day passes without I'm asked "What do you eat as a vegetarian?", "Where do you get your proteins?" or the classic "But don't you miss bacon?" which I guess are perfectly normal questions that I'm happy to answer, when they don't come with the usual suspicious and disdainful tone - hey, I'm not the one who is supporting a cruel and inhuame industry after all!

I have been thinking for some times to write a more in-dept post explaining why I decided to go vegetarian, how I do it, what I eat, etc. but it's really a lot of work and I'm already making great efforts to update my blog daily while studying at uni and working part-time. I have started writing this post and it's saved as a draft but I don't know when I will finally be able to post. Maybe I will do a serie of posts? Let me think about it.

I have been asked a lot, especially on Twitter, to post more pictures of what I eat daily because apparently, a lot of my readers are interested in going vegetarian but simply don't know where to start, which is completely understandable because I was totally lost at first, too. It's really easier than it seems actually because tofu, beans, chic peas and the like can be incorporated very easily in any meal to replace meat. I don't want to go in depth on this subject for now, but let me show you how easy to is to make your spaghetti vegetarian-friendly.


So basically you will need spaghetti (or any other pasta really, it will be just fine), pasta sauce (just make sure it's meat-free!) and tofu (I decided to try spinach jalapeno tofu because I never tasted it before but OMG, this stuff is spicy as hell!). I didn't have any vegetables on hands unfortunately so maybe my recipe will look a little plain, but feel free to incorporate whatever you have on hand such as onion, broccoli, mushroom (yum!), carrots, etc.

I don't know if I should really explain that because I guess you all know how to cook pasta but anyway, simply bring a large pot of water on to boil, add the pasta and bring back to boil - make sure to stir ocasionally! - and cook the pasta until al dente. Drain the pasta and set aside.


Slice the tofu however you want - I prefer smaller pieces because they require less cooking time and they are crunchier - and fry it with butter (or olive oil) in a large pan until it's cooked how you like it to be - I like my tofu crispy.

You can cook the pasta sauce in a pan or simply microwave it - which I prefer because it's faster - then add the sauce, tofu and veggies (if you used some) to the pasta. I also personally love to add some cheese bits or parmesan. Mix gently and enjoy!

  3. I'm not a vegetarian, but I try to eat meat only 1-2 times a week, to be healthy. Also, I really love veggie dishes!
    I'm from Greece, and 50 years ago, people rarely ate meat here, but they lived until a very old age ;)

  4. I'm not a veggie but could go weeks without eating meat and often have meat free dinners. I use soya mince as a substitute when making spaghetti bolonaise and it's one of my favourite dishes. Would like to try tofu but it's not so widely available in supermarkets here xx

  5. I don't eat tofu very often - mostly at restaurants b/c husband hates it - but I find it's easiest to try to cram beans and more veggies into everything. Really good for you and I definitely can tell the difference between when I eat lots of veggies and beans and when I survive on fries and doughnuts! I do a similar dish minus the tofu all the time <3 yummo pasta

  6. Hi! I am a new follower and I live a pescetarian lifestyle so I enjoyed this post! Lots of people ask me all the time why I don't eat meat (I DO eat seafood however) and I try to explain to them how terrible the meat industry is for animal rights (mostly USA), the huge carbon foot print it carries, and how downright nasty the meat is (mostly USA) due to all the hormones and antibiotics you consume via meat. It seems like people ask but don't want to hear the actual response I give, haha.

  11. @мιѕѕ.ℓαяα : Tofu is one of the most versatile food ever because it will absorb the taste of anything around it, but I'm still not a fan. I prefer beans and the like (:
